Rice, Iranian food

One of the important grains in Iranian food, is rice. There is no exact date to show when Persian use rice as their food but according to historical document rice was imported from China for the first time. In addition to main food, rice is use in preparing ritual food such as Shoolehzard. Eating rice on different occasions like Shab –e Yalda, Chaharshanbe Suri, the first night of the New Year, and Sizdah Bedar were customary among Iranian.In Iranian culture and regarding to rice cooking we have two kind of rice ‘’ polow ’’ and ‘’ chelow ’’. Chelow is plain rice served as an accompaniment to a stew or kebab, while polow is rice mixed with something. Rice is prepared by soaking in salted water and then boiling it. The parboiled rice (called chelow) is drained and returned to the pot to be steamed. Meat, vegetables, nuts, and fruit are sometimes added in layers or mixed with the chelow and then steamed.
