Gaz
Gaz is an Iranian nougat and the main souvenir of Isfahan. The unique ingredient of the candy is kind of syrup called Angabin or Gazangabin. It’s a shrub sap taken from a plant with the same name. The syrup is made by a small insect. It starts living on the leaf or the stalk of the plant and sucks its sap to make the syrup. In late September, yellowish shiny beads appear on the plant which is called Gazangabin’s concentrate. It is used in baking Gaz. The nougat comes in different shapes and tastes. Pieces of pistachio, almond or a mixture of two are used in the candy.
